Why is the Kohen uncircumcised in the first place?
What is Terumah?
Why is this a big deal?

It should have said "the uncircumcised Kohen" in the question, sorry.

First of all, he didn't even want to eat it.
As far I'm concerned, let the priests eat that crap. And it is NOT the big deal they make it out to be. Every time I hear about this Terumah business I throw up my hands and whisper a small curse.

no one who is uncircumcised may eat of a davar kadosh. at the time when ex. 12:48 was mentioned, not all the jews had been circumcised as of the leaving of egypt -- there must have been some from shevet levi who were not yet circumcised and they were not allowed to eat until they were circumcised. by the time the nation was solidified, and the laws of terumah are given in leviticus 22, no mention is made of an uncircumcised kohen. but because there are always circumstances in which a kohen might not be circumsized, the law stands -- look here for the talmudic argument
