I cooked a chicken on the grill using the beer can method to 180 degrees in thigh and breast. When I cut into the thigh joint a clear red liquid ran out. At this temp the chicken should be over done so why does this happen?

The thermometer that I used and registered over 180 registers in aproximately the same range as other baking thermometers I have. Also the meat literally fell off the leg bone when I attempted to cut it.

This is not necessarily blood that you are seeing, but may simply be the juices of the chicken, since you cooked it with a very moist method (the beer can method). If you took the chicken directly off the grill and cut it immediately, the juices would still run and might still have a red color to them if you "smoked" the chicken, which is what normally happens when you use the beer can method, since this is indirect heat, not direct. If you let the chicken sit for about 10-15 minutes before cutting, these juices will redistribute and you should not have this problem. If the meat pulled easily off the bone and the joints were loose, your chicken was done. Hope it tasted good -- mine usually does!!

Your chicken wsa probably frozen first. There is a reaction that causes hemoglobin in the bones to leach into the flesh (meat) upon cooking after it hs been frozen. The meat around the bigger bones will be a darker color as well.

This is harmless, however, and now that I think about it, probably more nutiritious as far as iron content of the food. It's just an aesthetics thing. If you dont' like it, use fresh chickens only.

You must cook the chicken all the way or you could get sick. The blood means it is not cooked all the way. Once the chicken is cooked all the way, the blood is the dark brown stuff inside the chicken.

Hi,,,, well I think you answered your own question here... The darn chicken is Not done !!!!!!

If you cook that bird at 180,,, you better cook it for about 5 hours...lol
Try cooking it in an oven at about 350 for an hour and half or so.... and just drink the beer while you wait......

It was not fully cooked. Those instant read thermometers don't last, it's probably not registering the correct temperature. Did it look and smell done?

It isn't juice, it is blood, and you may not be cooking it hot enough. Try turning up the heat just a bit.

Maybe it needed more time. To me it sounds like blood was still present.

If it has any tint of red.....don't eat it....it is not cooked enough...just like Hell's Kitchen last night!
