I am in China and am missing my western dishes...

So here there are is no cream in supermarkets. Anyone knows how to make:
sour cream
whipped cream
or heavy cream

I can't get cheese but I could get milk, butter and yoghurt. I don't know what else might be useful.

Bummer. Any chance they could get through Customs in a care package? Otherwise you'll have to take a trip to Shanghai, Beijing or Hong Kong where there are western stores to get them.

In place of the cream, you can try getting some evaporated milk or enrichening it with powdered milk. But for cheese, you'll need whole milk. It takes about 8 gallons to make 1 pound of cheese.

If you want to make yogurt, you can do it by boiling milk and leaving it out on the counter for several hours. It will thicken up as it cools. It'll make a reasonable facsimile of sour cream. Just refrigerate after it thickens.

If you can get raw, unpasteurized milk - let it sit for a day in a refrigerator, heavy cream will rise to the top.

Sour cream is letting the heavy cream sit for a while until it goes sour - usually in a fridge for 3 or 4 weeks. You can thicken it with glycerin, flour, or cornstarch to get the consistency you're looking for.

You can get whipped cream by using the heavy cream and adding powdered sugar with some vanilla to taste, and whipping it with a mixer or a wire whisk (which will take longer).

You can also make butter with heavy cream. Just add salt and mix with a blender.

whip cream is easy, all you need is milk and sugar, and if possible a dash of vanilla beaten with a mixer,... sour cream=1 cup cottage cheese,1 tablespoons lemon juice, 2 tablespoons milk mix on high speed till creamy, another recipe for sour cream= 2/3 cup of milk, 1/3 cup of butter or margarine,1 tablespoon vinegar,mix the butter/margarine and milk until smooth add the vinegar mix and refrigerate...as far as heavy cream goes the best I can do is give you a substitute recipe= 3/4th cup of milk and 1/3rd cup of butter/margarine melted and cooled then mixed together or 1/2 cup evaporated milk and 1/2 cup of milk sweetened to taste and mixed,or ice cold evaporated milk + 2 teaspoons sugar whipped ( use immediately)

I feel for you. I was in China only for 5 weeks, but it was pretty weird with no dairy whatsoever! :)
Honestly, I think your only hope might be to find some kind of Western import store... How big is the city you are in? Or else maybe if there is somewhere online that can deliver that kind of thing!
The only way I can think to make that stuff would be with a big butter churn. :)
