To save for later bread making. I freeze the loaves but this lady has heart problems and cannot make that many at once and has been over run by the zucchini.

I would grate it and freeze like that. Then thaw, slqueeze out, and measure use in recipes.

If you can get it to the grated form, where you have drained all the water out, normally how you would add it right into the bread dough, then it would be best to freeze it like that. If you freeze if before you squeeze out all the liquid it will get too watery from freezing and then thawing.

FRISEE it, and then proceed to soak in olive oil. Stuff it in a soft-shell crab, put it in the oven. Then add 3 cups dry macaroni, 2 tablespoons lard, and cook for 20 minutes over open fire.

Wrap in saran wrap and freeze.

Shred and put in ziploc freezer bags in the amount called for in your recipe. I have never worried about the moisture before freezing. Drain well when thawing and before adding to your recipe.

peel,slice in half lengthwise,scoop out seeds, cut into "fat french fries" place in zip lock baggie. drain well after defrost. also fry breaded zuccinni cut like fat french fries, more meatier and tastier.
