Just use a regular cake recipe and substitute Splenda Spoonful, the kind in the bag that you use measure for measure like sugar.

Make a pound cake or something you dont' need to frost. You may also try simmering soem fresh fruit w/ some splenda to make a fruit topping, instead of icing.

You don't need a sugar-free recipe. Just use Splenda or Sugar Twin. They can be used in high-heat cooking on a one-one basis, i.e., one teaspoon of sugar is the same as one teaspoon of Splenda. I'm diabetic and I've used those for years and when I bake and don't tell anyone that's what I've used, no one ever notices! Try it!
