How spicy do you like it? For healthy and bland, just steam for a few minutes, add sea salt & black pepper. For delicate herb flavour, wrap in foil with dill weed and steam for a few minutes depending on thickness of steaks. For oriental Thai type taste, make paste with lemongrass, ginger, garlic and chilli - use pestle & mortar or processor/blender but you don't want it too smooth. Foil again, fish covered with paste, steam as above.

LIME GRILLED HADDOCK STEAKS
Lime Grilled Haddock Steaks
1/4 c fresh lime juice ( 2 to 3 limes)
2 tbsp olive oil
1 clove garlic, finely chopped
1 tbsp soy sauce
1 tbsp Dijon-type mustard
1/4 tsp salt
1/4 tsp freshly ground pepper
6 Haddock Steaks ( about 1 inch thick)
Prep:
1. Preheat grill or broiler. Then in a small bowl whisk together the lime juice, olive oil, garlic, soy sauce, mustard, salt and pepper. Brush the steaks with 1/3 of the dressing, save the rest.
2. Place the steaks on the grill or broiler pan and grill or broil until golden on the outside and done to taste. Takes about 3-5 minutes per side.
3. Remove the Haddock from the broiler pan or grill and place on a platter or individual plates. Use the rest of the lime mixture and serve immediately.

I don't know if this will work for the cod ,but for the haddock soak them in milk for a couple for hours then wrap the in some foil with a couple of lemon slices and a small pat of butter and grill for about 20-30 min.
very good and easy.

Open Cod hash.
Chop fish into 1 inch chunks.
Cut some new potatoes into quarters with skin on. Boil for 15 mins.
Place in cold water to cool, then peel.
Fry in olive oil for 5 mins, add a bunch of roughly chopped spring onion for 3 minutes.
Cover fish chunks in seasoned plain flour, then fry in a seperate pan in olive oil for about 5-7 minutes until lightly golden.
Add fish to potatoes for a final warming.
Serve - delicious.

Lightly spread the top of the fish with a thing coating of either butter or olive oil. Crumble up some of your favorite style of crackers, and mix with a little garlic and onion powders. Sprinkle all over top of fish. Then top with diced tomatoes and parmesan cheese. Bake at 400 for about 30 minutes.

i don't know how this would taste with cod or haddock, but i wash the fish and place it in the oven with italian dressing all over it. it stays in there for 20-25 mins on 350. taste good.

BAKED HADDOCK WITH OYSTER STUFFING
Remove skin, head, and tail from a four-pound haddock. Bone, leaving in large bones near head, to keep fillets in shape of the original fish.
Sprinkle with salt, and brush over with lemon juice.
Lay one fillet on greased fish-sheet in a dripping-pan, cover thickly with oysters, cleaned, and dipped in buttered cracker crumbs, seasoned with salt and pepper.
Cover oysters with other fillet, brush with egg slightly beaten, cover with buttered crumbs, and bake fifty minutes in a moderate oven.
Serve with Hollandaise Sauce.
Allow one pint oysters and one cup cracker crumbs
or you could try
CODFISH CAKES
Soak the codfish all night, then scald for ten minutes; put to it an equal quantity of potatoes boiled and mashed;
moisten it with beaten eggs, a bit of butter and a little pepper;
form it into round cakes, about half an inch thick, roll them each one in flour, and fry in hot lard until they are a delicate brown. The lard must be boiling, and the cakes fried gently.

If you have a three piece micro-safe bowl/like tupperware, this is a good recipe...
MICRO-DISHED FISH STEAKS...
Cut fish in halves, between the halves sprinkle salt and pepper...Put 1/2 c. of water in the bottom part..Place fish in the collendar part...Top with pats of lowfat butter...Cover, and nuke for 4 minutes, and let sit 5 minutes, covered...Check for doneness...If not done nuke 2 more minites...Do in increments of 1 minute 'til fish is done...DO NOT OVERCOOK...Easy and enjoyable, while low in fat...

Place on foil, add a tin of chopped tomatoes and some dried mixed herbs, wrap and roast in the oven. Watch out for steam burns when opening the foil parcels.
