ROASTED CHICKEN WITH BALSAMIC VINAGRETTE
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
2 tablespoons olive oil
Salt and freshly ground black pepper
1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
1/2 cup low-salt chicken broth
1 teaspoon lemon zest
1 tablespoon chopped fresh parsley leaves
Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve

Here's a simple dessert you can make:
Strawberry Angel Food Cake
1 storebought Angel Food cake, torn into bite sized pieces
1 (8oz.) package no fat cream cheese, softened
1 (12 oz.) container light whipped cream
2/3 cup powdered sugar
2 lbs. fresh strawberries, sliced
With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.
In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.
Chill until ready to serve.

You should go buy a nice chicken. Cook it for 2 hours. For some sides you should have corn or mixed vegetables, mashed potatoes or a baked potato, and you should have stuffing. That is the best good dinner you can make in my point of view.

I say Parmesan Dijon Chicken! I made it for dinner last night, it was delicious! You mix melted butter, parmesan cheese, and dijon mustard together in a bowl, dip thawed chicken into it, and place them into a large ziplock bag filled with bread crumbs and any other seasoning you would like. Shake and then bake! Bake about 25-30 mins.

CRAB AND HERB FETTUCINE
Delicate crabmeat gives sweetness to a light citrus sauce served on top of pasta.
1/4 cup dry white wine or chicken or vegetable stock
1/4 cup tarragon or white-wine vinegar
1/3 cup finely chopped shallot
1 1/4 sticks (10 tablespoons) cold unsalted butter, cut into tablespoon pieces
1 lb jumbo lump crabmeat, picked over
3 tablespoons chopped fresh tarragon
3 tablespoons chopped fresh chives
1/3 cup chopped fresh flat-leaf parsley
1 1/2 teaspoons finely grated fresh lemon zest
3 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 lb dried egg fettuccine
Boil wine or stock, vinegar, and shallot in a 2 1/2- to 3-quart heavy saucepan over moderate heat until liquid is reduced to about 1 tablespoon, about 3 minutes. Add a few tablespoons butter, whisking constantly. Add remaining butter 1 piece at a time, whisking constantly and adding each new piece before previous one has completely melted, lifting pan from heat occasionally to cool mixture. Reduce heat to low, then add crabmeat and cook, stirring occasionally, until just heated through, about 2 minutes.
Remove pan from heat and stir in herbs, zest, lemon juice, and salt.
Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 3 tablespoons of pasta-cooking water, then drain pasta.
Toss pasta with crab sauce and reserved cooking water in a serving bowl. Season with salt and pepper.
Makes 6 main-course servings.
A nice lettuce or fresh spinach salad and steamed or grilled veggies, and a fresh fruit salad would be perfect.

My husband makes a great, easy seafood alfredo. Fix your favorite type of pasta (we like angel hair or fettucini). Get a bottle or two of Bertolli's alfredo sauce. Get a bag of frozen, pre-cooked shrimp and/or a package of artificial crab. mix the alfredo sauce and the seafood and let them heat up, then dump them in with the pasta. It's easy and quick, so you can spend less time in the kitchen, and more playing with your new grandson!

Unsure whether your daughter is planning to feed the baby naturally or using formula but if she is going to feed it nature's way, then she needs to be careful of her diet for the baby's sake.
So, maybe chicken cordon bleu (easy to make yourself because you just lay the chicken breast flat, beat chicken with a mallet and roll it up with swiss cheese and a thin slice of ham and secure with toothpicks.) LOTS of protein! (in case you don't have a recipe, below with my sources there's a recipe that is simple and had 412 persons gave 5-review and it has a photo)
I also think Mashed potatoes goes really well!
Also FRESH VEGGIES can be prepared with a Really good salad, you can mix Field Greens with Spinach or try one of the DOLE salad mixes in the bag. Dole has salad kits that taste great like Garlic Caesar (Garlic is great for its medicinal value), Organic Spring Mix with Herbs, Fall Harvest (has cranberries and other tasty treats). also you can add a light dressing of part olive oil (extra virgin is best type of olive oil) and part vinegar (balsamic vinegar is best). Add any of your favorite veggies such cucumbers, olives, carrots, bell peppers (or other peppers), even fruit like apples, or Add cherry or grape tomatoes, (yes, even in the Caesar, it gives it color and also Tomatoes have things that are great for the body
And some fresh-baked whole-grain bread or rolls from your local bakery (my favorite bakery is PUBLIX and their 5-grain bread is mouthwteringly lovely!
For a mouthwatering and tasty cobbler-style dessert that is quick, Rich and delicioius, try a "Dump" cake. (Recipe below) and serve with french vanilla or plain Cool whipped (or Generic) or Vanilla ice cream.

I always think mexican is different and fun! You could make fajitas, nachos, burritos, tacos... side dishes could be chips and salsa, mexican rice, etc.
