VEAL is calf - young cattle. It is actually a sort of by-product of the dairy industry. To keep the cows producing milk, they must reproduce periodically.
A few answerers got it wrong. Veal is not deer; it is not Lamb/ Sheep. It is young cow/ cattle. Deer meat is called Venison; Sheep meet is called Mutton, young sheep meat is called Lamb.

Veal today "is not" a young, baby calf. Used to be.
Sadly, I hate to inform you that "veal" today is produced by confining a bovine in a small pen, so it cannot roam. It is actually starved to an extent, which produces anemia in the animal, causing the meat to turn a pale pink color, resembling "veal" as it is in a milk fed calf.
This practice breaks my heart, worse than the butchering of a milk fed calf, just after weening.
A dressed baby calf may only weigh 40-50-60 lbs. or so. I have carried the whole carcass. Does not bring enough money. The above may weigh closer to 150 lbs or more.
This practice was revealed by Prevention of Cruelty to Animals.
I have seen sickening photos.
Nothing has changed. I have not consumed "veal" for many years.

Veal should be banned ! The procedure to make it is very unnatural & torture on poor baby animal. The baby cow (calf) is detached from her mother & kept in a specially designed care unit where it is feeded with essential diet, focusing on increasing its body weight. As the weight is increased unnatrually the baby cow can't walk & keeps sitting & gaining weight. When its reaches the required weight its slaughtered.

Veal is a baby cow that they don't let wander around, they keep it caged up so the meat ends up very tender and not tough to chew.
