I like salmon fillet served with hollondaise sauce.
It's sooooooooooooo good and you can buy the sauce ready made so just cook the salmon and hey presto - yummy dinner.

The easiest AND YUMMIEST Salmon (also can be used for chicken and is great with pork tenderloin) Limeade Salmon INGREDIENTS 1 small can limeade frozen concentrate 1 clove garlic, minced 1 pound salmon DIRECTIONS In a small bowl, mix all together. Place salmon in a shallow glass baking dish, and coat with the marinade. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once. (dont marinate longer, because it can actually cook your fish a little and that isn't yummy) Preheat oven to 400 degrees F (200 degrees C). Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Get a dish - bung in some spinnach.
Steam some leeks - bung on spinnach in dish.
Chuck salmon fillets on leeks. You could do this artistically of course.
Crush garlic and ginger in olive oil and spread over fillets.
Squirt lemon juice over the lot.
Gas 7 - higher if you want fillets to crisp up a bit for 25 mins.
Serve with salad.
Easy peasie.

Never thought cheese sauce goes with fish meself, so: try tossing the fillet with a bit of red or green pesto mixed with olive oil, wrapping it in foil and dropping a glug of white wine in just before you seal it. Whack in oven (gas 5) for about half an hour.
Serve with crushed new potatoes (lazy mash - don't even peel 'em, just boil em, bash 'em about a bit and toss with more pesto) and green salad.

Couldn't give you any tips myself, but Delia Smith's website (deliaonline.com) is pretty good for recipe ideas, and some of them are v simple and easy. Easy to search on it too.

my favourite is white sauce with fish veg and pots. But what is wrong with honey and mustard sauce (The one in a jar) cook this seperate than add if you want i love this with chicken
