That's what they will do.
Make sure she is not in a harmful place - behind stove, etc.
Leave out fresh food and water and clean litter where she can find it all.
She'll come out when she is ready. Be patient.
especially since she is older (and congratulations on taking an older cat), she'll need time to adjust to the change in environment.

Did you get this kitty from a shelter? If so, she might find the open environment she's in to be kind of intimidating. When my friend got a cat from a shelter, the volunteers there told him to keep her locked in the bathroom for a couple of days - visiting with her frequently - so she could adjust to the scents and sights of a new place while not being overwhlemed by how open and large it was. Being in a small cage for weeks or months or in some cases years can really affect a cat, and it takes time to get used to something different. Be patient, give her lots of affection, and she'll come around.

Let her come out in her own time, she will eventually. It's normal for a cat to seek out a hidey hole in a strange new environment. When she does venture out, let her approach you. Keep still, talk low and in a soothing tone.

She'll come around, she just needs time to adjust. you'd probably hide too if you were suddenly tossed into a new environment you knew nothing about. Just be patient with her, she'll soon realize that she's safe and she'll begin to explore.
