You will need a blender or food processor...
Apricot Sorbet
1 can (15 ounces) apricot halves, undrained
1 to 2 Tablespoons sugar
1 Tablespoon lemon juice
Freeze the apricots in a freezer-proof container. Place frozen apricots in a blender or food processor; add sugar and lemon juice. Cover and process until combined. Serve immediately or freeze. Yield: 4 servings.
Raspberry Sorbet
1/4 cup plus 1-1/2 teaspoons lemon juice
3-3/4 cups unsweetened raspberries
2-1/4 cups confectioners' sugar
In a blender or food processor, combine all ingredients; cover and process until smooth. Pour into six dessert dishes. Cover and freeze for 1 hour or until set. Remove from the freezer 15 minutes before serving. Yield: 6 servings.

1 c. sugar
2 c. water
2 qts. strawberries
2 tbsp. lemon juice - freshly squeezed
Steps:
1. Combine the sugar and water in a saucepan and bring to a simmer. Simmer for 10 minutes until a syrup forms.
2. Add the strawberries and lemon juice to the syrup.
3. Puree the mixture in a blender.
4. Strain the mixture with a fine strainer. Press on the solids to extract as much juice as possible.
Tips:
If you don't have an ice cream maker, you can freeze the sorbet in a covered container. Stir every half-hour so the mixture doesn't freeze into a solid block.
A very useful tip.
Do not stir the sugar and water. I learned this the hard way!

Freeze a metal jar of some sort, put the ingredients inside of it, then roll it around on the floor. It's what the ice cream maker does - forms the ice cream from stirring it around. You and your partner can even do it and pass it to each other. Just make sure it's cold, maybe roll it for half an hour then freeze it for half an hour then roll it again. That's how they made ice cream in the olden days - so you should make a sorbet using that method!

Julia Child showed a way using a glass 8.5 by 11 inch x 2 inch pan cooled down freezed in the freezer pour the sorbet liquid into the pan and every twenty munutes pull a fork thru the mixture and put it back in the freezer. After a few cycles the mixture becomes semi-frozen depending on texture you want more or less time. I use a Cuisinart 2 qt. unit however the simple method is just as good.

Strawberry Sorbet
All you need is
24 ounces of frozen strawberries, slightly thawed
3/4 cups of sugar
blender
9 x 13-inch baking pan
spatula
large spoon
1. Put about half the frozen strawberries and 3/4 cups of sugar into a blender and blend until smooth. Sometimes you need to stop the blender and pack the strawberries down with a wooden spoon so they're easier to blend. Make sure the blender is completely stopped before you take the lid off.
2. Now add the rest of the strawberries. Put the lid back on and continue blending.
3. Then, pour the mixture into a 9 x 13 inch pan and freeze it until it's hard, about 2 hours.
4. When it's ready, let it soften a little bit by leaving it out at room temperature. Then, break it up using a wooden spoon.
5. Pour it back in the blender and blend it again until it is smooth.
6. Then spoon it into dessert dishes and freeze it again for about 20 minutes before serving.

The best way to do it is get all the fruit that you would like..such as strawberries or peaches ...and then put them inthe freezer over night...then the next day puree them in a blender and make sure that you strain the puree into a large bowl...this way all the chunks are removed. Now with the smooth puree mixture...taste it to see if you need to add sugar and then add some if needed. Mix it up...now...put it in a plastic bowl...and place in the freezer...and every 2-3 hours stir with a fork...and continue to do this until it is mostly frozen ...to a sorbet consistancy...and there ya go.

If you don't have a blender, to chop up and puree the frozen treat of your choice,....
I would suggest you put the frozen cubes, cups (emptied from containers) into a bag, or even a towel, wrap it up till there is about three or four layers. Put it on the ground and give it a lotta wacks with a Baseball Bat. Reform the "pile" to get better "Crushing Blows",.... When you think its good and well - Wacked,... that is if the towels don't explode from being wacked and beaten so severely. Unwrap the cloth or towels, scoop the surviving "remains" into a bowl or cup, or just eat outta the unfolded mess - Enjoy!!!
Otherwise, I think you should get yourself a blender. Most of the Big department stores like Walmart or K-mart, Target,... They always have at least one model that is just so cheap (probably last a few months). It would be worth it if you're only gonna use it once in a while.

well, yeah, I suppose that you could,... although that would be alot of work, what with all the smashing of ice and constant mixing while in the freezer. But you know what, that sounds like fun, maybe instead of hanging out with my boyfriend, that's what I'll do tonight too! It'll be fun, just the 2 of us in the whole world making sorbet together in the freezer! YEAH!
But seriously, with a blender, it takes alot less time and it comes out like a smoothie. want it to be more like sorbet? Get an ice cream machine~

Yes.... you need a large bowl to put the unfrozen sorbet mixture in the freezer. You should stir it every 10 minutes since you dont have a ice cream maker. Good luck.
