If your asking about the most nutritious meal, and will give you leaner muscles, then choose meat with lots of protein and less fat:
Best are fishes:
Tuna - this is the best, because it contains less fat but very rich in protein.
Salmon - I tell you, a delicious fish with lots of protein. This fish can be quite oily, but don't worry, the fats are monosaturated and it has Omega something thats good for the heart.
If you can't stand fishes, I would say to go for a chicken breast (I said breast not thigh). Its high in protein. Just don't deep-fry it. You can also try grilled steak. Again, take note of the word grilled.
If you still can't stand not eating fried with all that fat in it, then just cut down the carbohydrates. Carb helps in storing fats. If you cut down the carb then your are no longer giving any room to store those fats.
This really works, I lost 15 lbs.

If you mean for nutrition...Bison and Elk (or Venison) have the least fat and the most flavor...Emu and Ostrich are supposed to be among the top also...
Remember when cooking these meats that due to their "leanness" they should not be cooked past medium as they will become very dry and much tougher.
Seafoods are good in many respects but I have seen alot of warnings for people with high cholesterol to limit the amount of shellfish they eat.

studies have shown that sea food is the best meat to eat. It has very little fat, and lots of protien. It is also easier for the body to digest that red meat.
