Fresh mushrooms don't freeze well. But if it's really necessary to freeze them, first sauté in butter or oil or in a non-stick skillet without fat; cool slightly, then freeze in an air-tight container up to one month.

Yes, but to be safe, you need to cook them a bit first. I slice some, quarter others, then fry just a little bit in some oil. Cool them off, put in freezer bags. I use the quarters in casseroles, and slices on pizza! Really handy when you get lots on sale.

It's tastier to just consume them while they're fresh! If you freeze them they'll taste rubbery next time you cook them!
