Original recipe yield: 8 servings.
Servings:8 (change)
INGREDIENTS:
1 pound lean ground beef
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (28 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 pint part-skim ricotta cheese
1/4 cup grated Parmesan cheese
2 eggs
1 (16 ounce) package lasagna noodles
8 ounces shredded mozzarella cheese
DIRECTIONS:
In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
Bake in a preheated 350 degree F (175 degree C) oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

Hi. This one is awesome and relatively easy. Brown a pound or so of ground beef with onion, green peppers, one clove of garlic minced, and salt and pepper to taste. When brown, drain grease and add 1 small can tomato paste and 1 large can diced tomatoes. Get that all stirred up then add about a teaspoon of Italian Seasoning. Let that simmer for about 15 minutes, and you have your sauce. To prepare the noodles, put about twelve of them into boiling water with a dash of salt and about a tablespoon of oil in it. If they don't fit into the pan, it's okay, they will get soft quickly and you can then manipulate them into the pan. When they are done, drain them and rinse them with cold water to prevent them from sticking together.

Then, you take your pan. (For this recipe, use a 9 by 13) Put half the noodles in the bottom after spraying with PAM. then, you take a tub of ricotta cheese (not cottage cheese, it is runny and gross) and mix it with an egg. put half the ricotta cheese on top of the noodles (I use a spoon and spread it because it is a little tricky). Then put half of a one pound package of shredded mozzarella cheese on top of that. Then put half of your sauce. Sprinkle the top with a good amount of grated Parmesan, some Italian seasoning, salt, and pepper. Cover this layer with the rest of the noodles. If the noodles are too long, on the first layer let them go up the sides, but on the second layer you need to cut them to fit. Then, put on the rest of the ricotta mixture, the rest of the mozzarella, then the rest of the sauce. Then sprinkle the top with a liberal amount of parmesan, and some Italian seasoning, salt, and pepper.

Then put in a 350 oven for about a half an hour, or until everything is really bubbly. Serve with some good garlic bread and a tossed salad. After assembly and before baking, you can store the lasagna in the fridge for a day or so if necessary, and many cooks feel this actually enhances the flavor of the lasagna.

INGREDIENTS:
8 ounces lasagna noodles
1 pound ground beef
1/4 cup minced onions
1 teaspoon salt
1/2 teaspoon garlic salt
1 (32 ounce) jar spaghetti sauce
1 (16 ounce) package large curd cottage cheese
1 pound mozzarella cheese, shredded

--------------------------------------------------------------------------------

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes, or until al dente; drain.
In a large skillet over medium heat, saute ground beef, onions, salt and garlic salt until meat is brown. Drain excess fat, add spaghetti sauce to beef mixture, and bring to a boil. Reduce heat, and simmer for 15 to 20 minutes.
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking pan.
Line bottom of pan with three lasagna noodles. Spread 1/3 of sauce mixture over noodles. Layer 1/3 of the cottage cheese over the sauce. Sprinkle 1/3 of the mozzarella over the cottage cheese. Repeat this layering process until all ingredients are used up.
Bake in the preheated oven for one hour. Let stand for 10 minutes before serving.
