2 packages fresh pork bratwursts (10 sausages total)
2 (12 ounces each) bottles pilsener beer
4 tablespoons (1/2 stick) butter
2 tablespoons granulated sugar
1 red onion, sliced thin
1 head red cabbage, cored and shredded (about 6 cups)
3 tablespoons cider vinegar
1 teaspoon caraway seeds
2 teaspoons salt
1/2 teaspoon black pepper
10 baby red potatoes (about 1 pound total)
3 Golden Delicious apples, unpeeled, cut into 1/4-inch slices
1 tablespoon vegetable oil
In a large pot, bring the beer and bratwursts to a boil over high heat. Reduce the heat to medium and simmer for 15 minutes, turning the sausages several times. Remove the wursts to a large bowl and pour the beer from the pot into a separate bowl.

In the same pot over medium heat, melt the butter. Add the sugar and cook, stirring, until the sugar melts, for about 2 minutes. Add the onion and saute for 4 minutes. Stir in the cabbage, vinegar, caraway seeds, salt and pepper. Continue to cook for 3 minutes, until the cabbage starts to wilt.

Pour in the reserved beer and bring to a boil. Cover the pot, reduce the heat and simmer for 30 minutes. Add the potatoes and apple slices. Continue to simmer, uncovered, for 15 to 20 minutes, stirring gently, until the potatoes are cooked, the cabbage is tender and the apples are soft.

Prepare a gas or charcoal grill, or heat the broiler. Brush the bratwursts with oil. Grill or broil, turning frequently, for 10 to 15 minutes, until a deep golden brown. Serve atop the red cabbage mixture.
