Firstly cook long grain rice & think its best to cool down, but dont cook it stodgy.
Heat HOT oil in pan/wok stir in rice & break in egg, keep stiring & pour in soy sauce till colour looks right.
Dont add salt as soy sauce sorts that out!
Keep stirring all the time & thats it.
Add in peas, mushrooms etc for something special !!

Egg fried Rice recipe, its my favourite recipe I use quick and easy serves two easily.


takes about: 10 minutes
Cooking time: 30 minutes

Serves: 2 lge portions

Ingredients
300g long grain rice
2 medium eggs
75g cashew nuts, roughly chopped
5 salad onions, sliced
Sea Salt and freshly ground black pepper
2 tbsp Light Soya Sauce

Instructions
Heat a large pan of water, add the rice and simmer for 12 minutes.

Heat a non-stick frying pan, beat the eggs well and add the mixture to the pan. Spread the mixture out until the whole pan is coated with egg and cook over a medium heat until it is set.

Roll the egg in the pan into the shape of a cigar, place it on a chopping board and chop finely.

Drain the rice well and mix in the egg, cashews, onions, seasoning and soya sauce.

Use Basmati rice, follow the instructions on the box for how much water etc, when the rice is almost cooked, drain it well, get some oil in a pan a teaspoon should be ok,heat it up, put the rice in the pan and break an egg up into the rice, add salt to taste, I add peas and onions as well. keep it moving around as u cook it so it does not stick.

Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine

Directions:

Break rice apart with wet hands
Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.

May be prepared in advance. May be frozen. Reheat before serving.

Basamthi rice, cook it first. Fry some onion and add beaten eggs stir until the eggs in small lumps and add rice and stir until all the ric and egg mixed.

you need;
2 cloves of chopped garlic
1 beaten egg
1 chopped onion
1 chopped tomato
bits of chicken
bits of beef
green peas
6 cups of cook rice

Heat oil in a pan then sautee garlic, onion, tomato and beef make sure beef is cook and put the chicken and put the rice and put salt , little bit of soy sauce, and pepper to taste. Voila you have your egg fried rice.

well, its easy, you just have to know how to do it right! cook your fried rice normally (so put all your greens, meat and rice in the wok, then crack the egg into the wok, make sure you stir as quickly as possible, or else lumps will start to form....and that wont look or taste nice.
