Shrimp Dip

8 oz. pkg. of cream cheese (I use fat free)
1/2 tsp. Worcestershire sauce (more if you like)
1 Tbsp. of butter or margarine
7 oz. can tiny shrimp or shrimp pieces or crab meat
10 oz. jar of cocktail sauce

Mix softened cream cheese, Worcestershire sauce, and melted butter in a bowl until evenly combined. (I melt the butter in the microwave by itself for 20 - 30 seconds.) Drain the shrimp. Mix the shrimp into the cream cheese mixture. Spread the cream cheese/shrimp mixture evenly onto the bottom of a dish (I use a 9 in. glass pie pan). Cover with plastic wrap and refrigerate for 1/2 hour to let it set. Spread cocktail sauce evenly on top of the cream cheese mixture. You may not need to use all of the cocktail sauce. Keep the dip refrigerated until you're ready to eat it. Serve with crackers.

Eggplant Dip

Eggplant Dip has a great texture with a tangy, vinegary, seasoned taste that is mellowed with the pita. I also like to smear the dip inside warm crepes for a different kind of presentation.

1 eggplant (1 1/2-pounds)
1/2 medium onion, grated or finely chopped
2 tablespoons capers
2 tablespoons freshly squeezed lemon juice
1/4 cup olive oil
1/2 teaspoon dried oregano
1/2 teaspoon salt or to taste
3/4 teaspoon freshly ground black pepper
1 tablespoon red wine vinegar
4 pitas
1 tomato, peeled, seeded, and diced
1 tablespoon chopped fresh parsley

Preheat oven to 375°F.
Set the eggplant on a baking pan or dish and pierce it a few times with a knife. Bake it until it becomes soft, about 30 minutes; it should pierce easily with a fork. Remove it from the oven and let cool. When completely cooled, peel the skin off and put the flesh into a blender or food processor. Add the onions, capers, and lemon juice. Turn on the machine, then gradually add the olive oil. Continue to blend until the eggplant is smooth and creamy. Transfer to a bowl and stir in the oregano, salt, pepper, and vinegar.

Warm the pitas briefly on a baking sheet, then cut each of them into 8 wedges. Arrange them on a plate or platter. Just before serving, stir the tomato and parsley into the dip.

This recipe is to die for!! The only thing is it is a little hard to "dip", better if you spread it on the crackers with a knife.
REUBEN DIP

8 oz. cheddar cheese, grated
8 oz. swiss cheese, grated
8 oz. turkey pastrami, diced
32 oz. sauerkraut, well drained
¾ cup mayonnaise

Mix all ingredients together, put in casserole dish, and bake at 350 degrees for 30 minutes. Serve with Club Crackers.

Take a medium can of pickled jalepeno slices..and a medium jar of green olive pieces with the pimento in them dice in small pieces... and a small soft cream cheese..then mix them together with a fork and ...add alittle juice from the pickled jalepenos ... to make alittle soft.. to dip a cracker..or toastito ..chips.. if you think you may need more soft cream cheese use your better judgement...

take a can of chicken drain it very well then chop a half bunch of green onions, and a medium package of cashews mix both of those things with the chicken and some mayo, sprinkle with some fresh cracked black pepper and add that to your club crackers, Yummy!!!!

Take I brick of cream cheese and chop up half a package of sundried tomatoes, two green onions, 1 tsp of garlic. Mix well and spread away.

Make a cheese ball with cream cheese, chives, and crushed almonds to go on the outside. It's really easy and pretty too!

spinach dip, I buy Knorr's brand vegetable soup mix, and there's a recipe on the box for the best spinach dip!!!!!!

Try spreading cream cheese on a plate and covering it with cocktail sauce and those little shrimps. It is killer.
