Introduction
This is a simple way to make a great dish of pasta.
In Italy it is considered a full meal.
Note: Carbonara means "in the coal miner way" because the Italians usually grind black pepper on top until the whole dish looks black as coal.
Ingredients
1 pound dry fettuccini noodles (you can use spaghetti as well)
8 slices bacon or pancetta
4 eggs
1/4 cup grated Parmesan cheese
1/4 cup grated pecorino cheese
2 tablespoon cream (optional - I dont use it)
Fresh ground black pepper to taste
Directions
Step: 1 Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
Fry bacon in skillet over medium heat until crispy, remove and drain on paper towel. Chop with knife into bits.
Beat the eggs, cheese and cream (if using) in a bowl, then add the bacon. Pour over the pasta in the pan and toss gently using tongs.
Return the pan to a very low heat and cook for 1 to 2 minutes, or until slightly thickened. Don't overheat or the eggs will scramble. Season well with black pepper and serve.

For the sauce to be authentic, it must have the prosciutto in it. You can also add garlic to taste, and many folks add peas.
Carbonara Sauce
Ingredients:
1/2 pound Prosciutto ham
8 slices bacon
1 pound linguini
8 ounces grated Parmesan cheese
2 onions, chopped
freshly ground pepper
3 tablespoons chopped parsley (optional)
1 1/2 pint heavy cream
Directions:
Fry together the bacon, ham and onions. Drain off fat. When pasta and bacon combination are done, combine them in a large bowl with the cheese, cream, pepper and parsley.

FRESH TOMATO CREAM SAUCE
1 can chopped tomatoes, or 8 plum tomatoes skinned and chopped w/ juice
2 cloves of garlic, chopped
1/2 minced onion
1 tbsp olive oil
1 cup of whipping cream
Fresh basil, torn
salt and pepper to taste
Heat oil in a sauce pot over med heat and add onion and garlic. Saute until onion is soft. Add tomatoes and salt and pepper. Simmer for 10 min.
Add cream, reserving 2 tbsp. Let the sauce simmer for 20 minutes until slightly reduced.
Add the last 2 tbsp of cream at the last minute.
Sprinkle with fresh basil. Serve over fusili or linguine pasta.

You americans are killing the italian food!!lol! First of all carbonara is not a sauce. Its a typical roman dish and its very easy to fix. Boil the pasta (spaghetti or fettuccine) Chop bacon and cook it on the side (dont let it over cook) use olive oil. Take a bowl and beat 1egg per person (2eggs 2persons ect) with parmesan cheese and a little bit of black pepper. Drain the spaghetti and let it cook for a second in the same pot with the bacon. Put it all in the bowl with the eggs and mix. Thats the original italian carbonara. If you want you can add chopped chicken breast cooked in olive oil also (dont forget to flour it) my husband loves it. Sorry for my english,I'm italian :-)

Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream
1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!

2 all purpose cream
1/4 cream cheese
1/4 butter
1 small can sliced mushrooms drained
10 bacon strips cooked and chopped into bits
5 pcs ham cut into small pieces
Set pan in a low heat put butter when the butter is melted put ham and mushrooms (do not brown mushroom) put all purpose cream and cream cheese (stir continously) add salt and pepper to taste. place it on top of the noodles and top with bacon
serve with garlic bread
