i am trying to find out what type of foods are health for someone who is trying to lose weight and is very iron deficiency.

Fresh is best. Frozen is ok. Canned is not so good as fresh and frozen

For an iron defiency fresh fruit is always best. Frozen is not that bad it's basically fresh and freezed, then put in a bag. I try not to eat anything canned, it's filled with loads of sodium and other preservatives to keep it fresh. While fruit is prtocessed it could lose some of it's nutritional value as well.

Try a multi vitamin everyday too!

Their findings in this (as well as our 1995) study show canned fruits and vegetables generally stack up very well against fresh. Although there is some loss of vitamin C content during heat processing, canning usually results in stable levels of most essential nutrients (8). The amount of a vitamin or mineral or fiber in canned food remains the same, even after one to two years of storage.

Fresh first absolutely, followed by frozen.
When using canned, it is best to rinse them under
cold water to get off excess packing salt.

fresh first, then frozen, then canned.... try and not cook the veggies, or if you have to steam them!

Science has proven that all these vegetables are nearly identical is vitamins and minerals.

Green leafy vegetables (spinach and chards) are high in iron.

vegetables are always better fresh.If you really cannot get it fresh,then you could buy it frozen.Eating vegetables raw is always the best.Don't buy the canned!.
