I do not have any other type of egg substitute or dried eggs as my recipe books suggest. I was in the middle of putting in ingredients when I found I only had two eggs instead of the necessary 3.

Also I have looked on the Internet but cannot find anything other than "use egg beaters or egg whites or dried eggs".

My girlfriend is a strict vegetarian - no eggs. She uses 1 TBSP of plain yoghurt or sour cream per egg for an egg substitute.

It will still work with only two eggs.
The eggs help to make the cake hold together, like when you scramble an egg. It will be fine with only two and not be as rich.

add a little more milk or liquid but beat the eggs you have very very well before adding to the dry and then again all toghether.

Aside from a little milk and vegetable oil..try a half mashed banana or apple sauce.
