Go out to the beach. From Beverly Hills you can easily go down Santa Monica Blvd all the way to the coast and get a feel for what West LA is like. The third street Prominade in Santa Monica has shops and restaurants (mostly chain shops) and you can walk around, watch street performers, go to the beach. Just a few miles south is Venice beach, where you can walk along the ocean and visit booths of random crap and people watch. Go during the day; it will be breezy/cool, especially at night. You can spot a celebrity and nearly get peed on by a homeless person at the same time. That's livin!

Oh, if you're into celeb spotting, go for a walk in Runyon Canyon in the Hollywood Hills area (just a few miles from your hotel). That's where they predictably go walking and jogging. Everyday. Plus, you can see a good view of the city.

Hollywood Boulevard with famous stars in the sidewalk! That's also where Graumann Chinese Theather is. If you have never been to Disneyland that is a couple hours away. I loved hanging out on Rodeo Drive (I know you mentioned that) and running into famous people. I spent an afternoon there and just missed Steve Martin, saw the lady that plays Bobbi Spencer on General Hospital and the tennis pro Serena Williams. Be warned that driving in LA is a rat race of CARS everywhere!

Of all the touristy theme parks, etc. Universal Studios is the most unique in my opinion.
