Because if you just put it on a plate without covering it up, it will dry out and it's inedible, and stinks up the fridge. Plus, you can stack containers on top of each other, plates with foil on them is a little harder.

Because uncovered food in the refrigerator both spreads and picks up germs from everything else in the fridge, but food in an airtight container doesn't, because it's sealed off.

he may be afraid of bacteria and spoilage, maybe he is also worried about messes. i can see where keeping it in a sealed container would help with the mess, but i am not sure about the bacteria and stuff it is just a guess. he may also have a thing about refrigerator smells.

with regards to question: because it goes bad faster, makes your fridge smelly, and can spill and contaminate the other food.
