I would say frozen. The frozen veggies are clean and fresh then kept bagged until ready to cook. The fresh veggies are washed daily and the nutrients are often washed away as well. The canned foods may contain more salt. You should check the label for this.
No one else has this answer, using common sense- frozen is best!

fresh and frozen vegatables have the same nutrition. because frozen are picked and then flash frozen they hold most (if not all) of their nutrients. Canned veggies aren't too bad, but you have to keep in mind the sodium content. Also, canned veggies will likely lose some of their nutrients to the water they are canned in.
In my opinion stick with fresh fruit. it just tastes better to me fresh then when it thaws out and gets soggy. frozen veggies are great. They last a while so they are affordable and they steam (and boil, if you dig that) wonderfully. I try to stay away from canned veggies. But canned fruit in juice (not syrup) is really good.
With regards to being Iron deficient, I can't really help you there. All I can think is to check out the levels of iron in various fruits and veg. also, eat protien and brown grain products. they have fair amount of iron in them. always check nutrition facts on food packages. This way you can choose based on your specific nutrition requirements (i.e. calories, fat, sodium, iron, protien, etc.). i think spinach and other dark green, leafy veg has a good amount of iron.

Frozen vegies are frozen within a couple of days of being picked and have no additives.
Tinned have had all the nutrients soaked out of them
Some "Fresh Vegies" are up to 6 months old before they get to the store so don't always rely on fresh

Fresh is best - tomatoes is actually the only thing better cooked as the heat creates lycopene. Iron is usually achieved by eating greens; spinach is very high - but so is liver. (liver & onions is great when eaten in moderation). You can also just take an iron pill - which would immediately make him feel better. Losing weight is a life change. Just get rid of the sugar and you're on your way.

Fresh is better, frozen is number 2 because the variety is not as good and frozen is not always fresh frozen, canned is not all that great cause they cook it and add salt and other preservatives.

Absolutely eat them fresh! Cooking them depletes some of the vitamins that your body really needs. just be careful not to make the mistake that a lot of dieters make when eating fresh veggies. don't dip them in high fat, high sugar dressings. many people even think that the non-fat dressings are much better, but they really aren't b/c they chock it full of sugar to make it taste better. sugar is the bane of my existence! I had to cut WAY back on sugar before I could finally get some pounds to melt off.
As for being iron deficient, you should really either eat some lean red meat or take vitamin B-12 supplements or just an iron supplement.

Fresh is ALWAYS the best, but eating any types of veggies is better than nothing.
Spinach has a lot of iron and eating tomatoes with spinach will help in the absorption of the iron. Good luck!

Fresh vegetables, first and foremost. Then frozen ones. Canned ones tend to have more sodium in them. The sodium acts as a perservative to maintain freshness.

Fresh is always best. If you can't get that, then frozen. Canned foods have extra preservatives and additives that are not the best for your body, but also takes away the flavour.
