That used to be the way you canned pickles back before we had pressure cookers and electric stoves!@

They were made in " crocks" and covered.Crocks are usually ceramic and then they are kept covered. the brine forms a moldy scum on the top and you open up the crock and skim it off.
They stay preserved from the salt and vinegar and are kept in a cool place.
Usually they were then Jarred ( canned) if you wanted to keep them longer
