Because the coffee grounds are not usually removed right away. Also, when coffee heats a long time it gets stronger needing more cream for lightener.

As it sits, it is still brewing and becomes darker. Sometime this is why people leave it on a very low heat plate. Not to just keep warm but to bring out a stronger taste. Thus you need to add more milk if you don't like it as dark. Same applies for tea.

pretty simply, you are burning your coffee. Turn the pot off, and if you would like another cup, put it in the microwave to warm it up. Better yet, get a coffee butler, which is a thermos that will keep your coffee warm all day without burning it.

When coffee sits on heat, the coffee will become stronger - thus needing more creamer and sugar to make it drink able!@
