I usually use Pam for baking but it usually leaves that sticky brown residue that you have to scratch off. Am I doing something wrong and what are the alternatives?

Pam (or any non stick spray) can do that, but just wash the pans thoroughly (and dry them thoroughly) and don't worry about it. I have had baking dishes do the same thing and even if I have used a brillo or SOS pad, it seems to also scrape the surface. So just long as they are cleaned well, I wouldn't worry about the little bit of residue. If you have scrubbed it well with hot soapy water, it will come off. But sometimes the pans also dis-colour with time and that has nothing to do with anything that is stuck on the pan.

instead of Pam, i use regular butter, and if it is something sticky then i put a little flour over the butter. when you take the thing out, your pan is clean. if that doesnt work, then use aluminum foil with a little butter over it. that should work well.
good luck

IF IM MAKING STICKY THINGS I LIKE TO USE ALUMINUM FOIL BUT MAKE SURE ITS RENALDS OR IT WILL SUCK

TRY USING BRILO PADS AS SOON AS YOUR DONE BAKING IT (DONT WAIT A DAY TO DO DISHES) THIS MIGHT HELP

AJAX CAN RID OF IT

BUT ALMINUM FOIL IS THE BEST IDEA THEY SELL NON STICK NOW

GOOD LUCK

if you want to keep them pristine, you need to clean them vvery thoroughly every time you use them, but isnt life too short to worry about something like that? does it really matter? when you die, are you going to be laying on your deathbed thinking about the nature of your baking pans?
