A bit of sugar. Takes any bitterness away and makes the sauce just lovely.
I've heard of someone using grape jelly, but I've never tried it.

I prefer to make a tomato sauce from fresh ingredients (not a canned sauce). But there are times when the fresh tomatoes are not terrific in the winter, so I will use canned tomatoes, but everything is fresh, and I do not let it cook for too long. Lots of onions and only a bit of garlic is needed, fresh basil (but you can use dried basil), a bit of oregano, salt, pepper and the special ingredient ... a teaspoon of sugar to accentuate the sweetness of the tomatoes. It is very subtle and will not make the sauce taste sweet.

I always put a little sugar in the sauce if its to tart and I put parmesan cheese in it.

it depends on the sauce.
it can be brown sugar, garlic, canned tuna, basil, ketchup, or ginger, oyster sauce, oregano.

spaghetti sauce is mostly tomato.
