When the dough is preparing to rise at any stage it is called proof, or proofing the dough. depending on the type of dough your making, there could be several ways to improve the way it will rise.

It is called proofing the bread dough. The fermentation of the yeast causes carbon dioxide and the dough rises and becomes light. If you didn't 'proof' the dough your bread would be extremely
dense and chewy. And not very tasty.
