The key words are "identifiable fish" meaning that you know what species you are eating. Fish sticks don't count. Sorry but fish tacos don't count unless you know the fish used to make the tacos.

I LOVE fish. I'm from a family of fish lovers.

The best fish I have ever had was wild salmon that was caught 2 days prior to going in my oven! I think it was caught in the Atlantic Ocean.

The fillets were 2 feet long and, at the thickest, 4 inches high.

I cut them up into serving size portions, and put them in plastic baggies to freeze. When I was about 1/4 of the way through, my hands were so oily, I couldn't open the zip top bags!

When I have salmon that fresh, I bake it at 350 for 20 minutes. It is so flavorful on it's own that it doesn't need any seasonings, spices or sauces.

I cook orzo (rice shaped pasta) in chicken broth.

I top the orzo with the salmon and have a glass of wine.

My favorite fish is Wahoo caught in the Gulf Of Mexico by my hubby; swimming in the morning, in my baby "fry daddy' that night. Use peanut oil, fish dipped in 'Louiseanne (brand) corn meal mix. Also, the real favorite, is Yellowfin or Blackfin Tuna caught in the Gulf Of Mexico that morning by my hubby and grilled, seasoned with Garlic salt/pepper and use this sauce....1 1/2 sticks butter, 1 lemon squeezed and rind thrown in, 5 or 6 fresh Basil leaves, heat on low til flavors marry. Baste throughout cooking and save some to dip bites in. We like our Tuna cooked all the way through.

The most delicious fish I ever had was a swordfish steak cooked on the barbecue grill. It came from a local fish market and was brushed with a bit of extra virgin olive oil. So simple, yet very memorable.
