I take the ground beef, italian style bread crumbs from Progresso, eggs to bind, add in peppers, onions, and mushrooms and top with flavoured tomato sauce such as Basil and Oregano or any kind that you prefer or you can use Italian style stewed tomatoes over the top. Sometimes right before its done I will sprinkle some grated cheese over the top to melt a little. Yummy. Now Im hungry! Thanks! LOL

Meat Loaf
2 pounds hamburger
2 eggs
3/4 cup milk
1 sleeve crushed saltine crackers
1 tablespoon Worcestershire
1/2 teaspoon salt
1/2 teaspoon dry ground mustard
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup chili sauce
3 carrots chopped
3 celery sticks cut in small pieces
Mix well, but do not over mix as it will make the hamburger tough. Spread in a loaf pan or a 9x13. Top with extra chili sauce. Bake at 350 degrees for 1 hour. To cut down on amount of grease in the pan, you can line the bottom with bread (bun halves work great also) then put the meat mixture on top.

This is one of the easiest things to make because all you really need is ground beef , (or ground turkey, that's what I use) eggs and ketchup and you build up from there. If you like more texture, you can add onions, bell peppers or celery. Most people add tomato paste or sauce or ketchup. Now for flavor you can start with salt and pepper and add, based on your liking, Worcestershire sauce, barbecue sauce, Tabasco sauce, soy sauce. For breading you can go crazy and use oatmeal, bread crumbs, croutons or even corn meal. Any of these variations will work. Two eggs per 1 1/2 lb. of beef. After you mix the meat and form it into loaves. Traditionally you top with ketchup before baking at 300 degrees for 30 to 40 minutes.

SOUTHWEST MEATLOAF
Makes 6-8 servings
2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.
----------------------------
This is a nice change from regular meat loaf recipes. My family won't eat the other kind anymore. Enjoy!!

2 lbs ground beef
1 package lipton onion soup mix
1 tsp garlic minced
1 tsp italian seasoning
Add bread crumbs to hold it together (not too much or you'll be baking a brick in the oven instead of meatloaf). Add a little ketchup.
Put into a loaf pan and bake at 350 to 375 for about 1/2 hour.

Meatloaf:
2 eggs
2 tsp salt
3 slices bread, crumbled
1/2 cup shredded carrot
1 1/2 lb lean ground beef
2/3 cup milk
1/4 tsp pepper
1 onion, chopped
1 cup shredded cheddar cheese (or mozzarella)
Glaze:
1/4 cup brown sugar
1 tbsp prepared honey mustard
1/4 cup ketchup (I've also used an 8-oz can of tomato sauce instead)
Mix meatloaf ingredients together and pat down into a loaf pan. Mix glaze ingredients together and spread on meatloaf. Bake 1 hour and 15 minutes at 350F. Let stand 10 minutes before cutting.
This one is my favorite!
Enjoy :O)

Ground beef, 1 small can tomato sauce, 1 egg, oatmeal, salt and pepper. Put beef in pan, dump in tomato sauce, beat egg in tomato can, dump in egg, salt, pepper and oatmeal. Enough oatmeal to make it stick together. Put in loaf pan, bake at 350 for about an hour. Or until knife inserted in middle comes out clean. I have been cooking for a long time, so sorry about no actual measurements. You can add onion or green peppers. Whatever you like.
