It's the way it is made.Feta is a brine cured cheese made with either goats milk or a combination of goat and sheep milk. Cows milk doth not make feta

Ya, I know what you're talking about. It's just the process I guess.
Salt dries it out and makes it crumbly.
Maybe we can learn to make it and market a less salty variety?

because that is how the feta is make and also one of the reason it can last longer. and olives and vine
