Italian Dressing:

1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon white sugar
2 tablespoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 tablespoon dried parsley
1/4 teaspoon celery salt
2 tablespoons salt

In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
To prepare dressing, whisk together 1/4 white vinegar, 2/3 cup canola oil, 2 tablespoons water and 2 tablespoons of the dry mix.

Caesar Dressing:

1 1/2 cups olive oil
1 tablespoon red wine vinegar
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons anchovy paste
1/2 teaspoon mustard powder
4 cloves garlic, crushed
3 tablespoons sour cream
1/2 cup grated Parmesan cheese

In a food processor or blender, combine the olive oil, vinegar, lemon juice, Worcestershire sauce, anchovy paste, mustard, garlic, sour cream and Parmesan cheese. Process until smooth. Pour into a glass container, seal, and refrigerate until ready to use.

Caesar Salad Dressing

1/2 cup freshly grated Parmesan
1/4 cup plus 2 tablespoons olive oil
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup fresh lemon juice
2 garlic cloves
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper to taste
Combine all ingredients in blender or processor. Blend until smooth.
Season to taste with salt and pepper.
Makes 1 cup.

Throw away the bottled dressing and try this twist on Italian dressing. You'll be glad you did.
1/2 cup olive oil
1/4 cup white wine vinegar
1 teaspoon dried Italian spices
1 1/2 teaspoons salt
black pepper
1 teaspoon sugar
1/2 teaspoon garlic powder
1 tablespoon mayonnaise
3 tablespoons water

6 servings Change size or US/metric

1/4 tsp salt
1/8 tsp pepper
1/2 c Parmesan cheese
1 tbsp of milk or half and half

Mix all ingredients together and shake or whisk until well blended.

1/4 c. vinegar
2 tbsp. chopped fresh parsley
1 tbsp. plus 1 tsp. grated Parmesan cheese
2 tbsp. vegetable oil
2 tsp. dry pectin
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried whole Italian seasoning
1 lg. clove garlic, peeled

Combine all ingredients except garlic in a jar. Cover tightly and shake vigorously. Press a wooden pick through garlic clove; add to dressing mixture. Cover and refrigerate until thoroughly chilled. To serve, remove and discard garlic. Cover and shake dressing well.
Makes 3/4 cup. Amount 2 tablespoons

Ceasar Salad Dressing Quickie

Chef Ramsey would rightfully cuss me out for this (grin), but for a very last minute, "oops, forgot the dressing" type of day...

I throw together some Helmans' Real Mayonaise, a tad of olive oil, and some garlic powder to taste. That's it! I put Parmeson cheese and lemon juice on the salad directly.
