OK, granted this will be different than most, but it works! And it's EXTREMELY simple.

Take out the pits, and cut up the peaches into smaller chunks, say about 10-20 pieces per peach. Put the peaches into a ziploc bag(s) and freeze them.

Get out your food processor.
Put in vanilla yogurt and some of the frozen peach chunks (and sugar or sweetener to taste, optional) and blend for only about 20 seconds.

Voila! Instant peach frozen yogurt! It's really fast and will impress your friends.
The frozen fruit makes the yogurt come out with a soft ice-cream-like texture.

This works fine with other fruit as well - mainly berries or other stone fruit.

Fresh Peaches
2 Pie Crusts
1/2 Cup Sugar
1 Tablespoon Ground Cinnamon
1/4 Cup Raisins
1/4 Butter or Margarine.

Cut peaches into slices.
Place one pie crust in botton of pie pan, fill with peach slices. Dab the butter in several spots on top of the peaches, sprinkle the raisins on, then the sugar, the the cinnamon. Wet the edge of the crust with a little water and add the top pie crust. Crimp the edges to seal them together. Poke a few hole in the top crust, to allow for steam to vent.
Bake at 350F for about 45 minutes, if the crust starts to brown to fast, wrap the edges if foil.
Cool on a wire rack. Serves 8. Serve with Vanilla Ice Cream!

Heat the peach slices with 1 cup sugar
Mix one cup sugar and 1 cup flour and 1 cup milk
Melt 1 stick margarine in the bottom of a asserole
Pout the flour mix on top
Pour the peaches on top of that
sprinkle with cinnamon
Bake at 350 for 35-40 minutes

FRESH PEACH COBBLER

1/4 c. plus 2 tbsp. butter
2 c. sugar (divided)
3/4 c. all-purpose flour
2 tsp. baking powder
Dash of salt
3/4 c. milk
2 c. sliced peaches

Melt butter in 2 quart dish. Combine 1 cup sugar, flour, baking powder and salt. Add milk and stir until mixed. Pour batter over butter in baking dish BUT DO NOT STIR. Combine peaches and remaining 1 cup of sugar. Spoon over the batter. DO NOT STIR. Bake at 350 degrees for 1 hour.

If canned peaches are used, do not drain, use 1/2 cup sugar in peaches and 1/2 cup sugar in dough mixture.

Peachy Muffins:
INGREDIENTS:
1 cup quick cooking oats
1 cup buttermilk
1/3 cup brown sugar
1/3 cup applesauce
1/4 cup molasses
2 eggs
1 1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups pitted and diced fresh peaches
2 tablespoons white sugar
1/2 teaspoon ground cinnamon

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, mix together oats, buttermilk, brown sugar, applesauce, molasses and eggs. In a separate bowl, stir together flour, baking soda and baking powder. Stir flour mixture into eggs mixture, just until moistened. Fold in peaches. Spoon batter into prepared muffin cups.
Bake in preheated oven for 15 minutes. While muffins are baking, combine 2 tablespoons sugar and 1/2 teaspoon cinnamon. After 15 minutes of baking, remove muffins from oven and sprinkle with cinnamon sugar. Return to oven and continue baking for 3 minutes, until a toothpick inserted into center of a muffin comes out clean.

I like grilling them! Just stick them on the grill and the natural sugars caramelize. It is so good. You can top them with ice cream or yogurt as well.
