To replace a DRY sherry, use 1/2 the equivalent amount of white wine (dry if you can find it) and the other 1/2 of vinegar add 1 tsp. of sugar

To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water OR
1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup.

even Coke or Dr. Pepper will work for a pork marinade.

Saki, wine, oil& vinegar - like a salad dressing, fruit juice.

don't worry about it much. The sherry is mostly for flavoring and to keep the other ingredients suspended in the liquid.

You can try any wine in a marinade. Pork? try white. sherry is sweet, try fruit wine.
