im growing vegetables in the garden and need to prepare them for the freezer how do i do that

Most vegetables boil for 2 minutes and plunge into ice water
Green beans boil for 5-8 minutes

Blanching is just simmering gently for a few minutes. You take the veg out of the water before they start to really cook. Poke them with a knife of fork and they will still be firm but not hard.

I suggest you steam cook your vegetables, blanching is a cooking technique similair to parboiling. However with the invention of microwavable bags, I would clean, cook, freeze store my vegetables for use at a later date.
