PIMENTO CHEESE SPREAD
1 lb. Colby or mild Cheddar cheese
1 sm. jar of pimentos, drained
1 c. mayonnaise
Shred cheese in food processor. Mix cheese, pimento and mayonnaise in large bowl. Mix well. Great as a sandwich spread or for crackers.

PIMENTO CHEESE SPREAD
Grind together: 1/2 lb. cream cheese or 1/2 lb. Longhorn cheese 2 hard boiled eggs
Set aside.
DRESSING:
In saucepan add: 1 tsp. salt 1 tsp. pepper 2 tbsp. flour 2 tbsp. sugar 1/2 c. milk 1/2 c. vinegar
Cook together until thick. Add cheese, eggs, pimento. Blend well. Cool and store. Makes a delicious spread for sandwiches, especially in hot weather. Keeps well.

I prefer a cup of New York extra sharp cheddar cheese, grated
about a tablespoon of pimientos, and Dukes light mayo.

grated cheddar cheese (which ever you prefer), pimentos chopped and patted dry with a paper towel, mayo (I like kraft real mayo) salt and pepper. Combine and stir.
