My mom happens to have a garden and these squash sort of magically appeared in the garden last year. haha. SO now we have like 5 squash plants and a bunch of squash and don't know what to make before they go bad. any suggestions?

Squash Casserole

1 lb squash, cooked and mashed
1/4 cup butter
1/2 cup milk
3/4 teaspoon salt
1 tablespoon sugar
3 eggs, beaten
3/4 cup cracker crumbs
2 cups sharp cheddar cheese, grated
salt and pepper

8 servings 1 casserole Change size or US/metric
Change to: casserole US Metric

55 minutes 15 mins prep

Mix all ingredients well.
cook in 1 1/2 quart casserole dish at 350 degrees for 40 minutes or until firm.

OOOOOOHHHHHHH are you lucky! Magically appearing summer squash would be my dream come true!

They're so easy to cook. Use a parer to take off any thick parts of the skin, but if they're tender just leave as is.

Slice them like potatoes would be sliced for American fries. Sautee a small onion and some garlic in 4T butter, then add in the summer squash. Cook them uncovered until they get all brown and delicious (just like American fries). Sprinkle with parmesan, salt and pepper and they're just delicious.

Oooh, fried squash! Cut it into slices and dip it in some egg, then coat it with bread crumbs. Fry in a hot, oiled pan until golden brown. Soooo good (not the most healthy way to eat it, but its squash its already healthy!).

Wash then slice in circles. Put a layer in foil. Sprinle with pepper and shaker parmesan cheese. Keep layering until you have enough to close the foil packet. Before you close, add a couple pats of butter. Double wrap in foil and cook on grill for about 20 minutes.

oh, yes maam i do, I'm thinking you might like some southern delights here. start with mustard greens, or collard greens, boiled and with a smoked ham hock in it with chopped onion. some fried catfish or whatever fish you like and some cheese grits to boot. either bake the squash or grill them with a soaking of butter and garlic both are good, or if you don't like greens, then make some mashed red potatoes with a little milk and some mayo and mix good......it's realllllly good either way.
