I cook mine on the stove. I put two tablespoons of oil into a pan. I brown onion ,bell pepper,a clove of crushed garlic and 1 c. of rice for a few minutes. I then add 2 c. of water, a couple of T. of tomato paste and some cut up tomatoes, and 2 T chili powder and a t. of salt. I bring it to a boil and then simmer it until it is done.

Rice Cooker Mexican Rice Recipe
Easy to make rice like you get at the mexican restaurant. Cooks up in your rice cooker without any fuss, mess or stirring! Haven't tried it- but could be made on the stovetop in a covered pot.
1 cup rice (I used long grain rice)
2 1/4 cups low sodium chicken broth
1/2 (6 ounce) can tomato paste
2 tablespoons butter
1/2 cup onions, diced small
1 garlic clove, minced
1/2 (4 ounce) can diced green chilies
1 dash pepper
1 dash red pepper flakes
cilantro or parsley, for color
6 servings
1. combine all ingredients in rice cooker.
2. cook according to manufacturer instructions.
3. when cooking time finished let it sit uncovered for 3 minutes or so to thicken.
4. stir before serving.

I think there's more than a few recipes....
But my favorite is 3 to 4 cups of unboiled rice one can of
peeled tomatoes whole or stewed.
And one whole chicken, put that in an oven for about an hour. with a lid or cover so the rice doesn't overcook.
I believe the authentic recipe has chicken broth and peppers with whole tomatoes

Mexican Rice
INGREDIENTS:
1 pound lean ground beef
1 onion, diced
1 green bell pepper, diced
1 (14 ounce) can beef broth
2 cups fresh corn kernels
1 (10 ounce) can diced tomatoes with green chile peppers
1 (15 ounce) can tomato sauce
1/2 cup salsa
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon minced cilantro
1 1/2 cups uncooked white rice
1 cup shredded Cheddar cheese

DIRECTIONS:
In a medium stock pot, brown the ground beef over medium heat. Drain any fat. Add onion and green pepper. Cook until onion is tender.
Stir in the beef broth, corn, tomatoes with green chile peppers and tomato sauce. Add salsa, chili powder, paprika, garlic powder, salt, pepper and cilantro. Mix thoroughly. Bring to a boil and stir in rice.
Cover and cook until rice is done, about 25 minutes.
Sprinkle Cheddar cheese over the mixture and continue cooking 10 minutes, or until cheese is melted.

This Mexican rice is made with rice, onion, green bell pepper, garlic, tomatoes, and spices.
INGREDIENTS:
1/2 cup chopped onion
1/4 cup chopped green bell pepper

2 teaspoons canola oil
1 cup long-grain rice
1 can (about 15 ounces) diced tomatoes with liquid
1 teaspoon chili powder
1/4 teaspoon ground cumin
1/2 teaspoon salt
1 1/2 cups beef broth
PREPARATION:
In a heavy skillet sauté onion, green bell pepper and garlic until onion is softened. Add rice to skillet and cook over medium-high heat until rice has browned. Add tomatoes, chili powder, salt, and beef broth. Bring to a boil; cover, lower heat, and simmer until liquid has been absorbed, about 20 minutes. Taste and add more salt if needed.

Buy a box of Goya Arroz Mexicano. Its about $1.50 and itis the best. Add some green pimento olives and rasins and chicken for a central american flair. You can even add some salsa to the mix. I don't like to cook so this is the beest for me and everyone likes it. Enjoy!
