Chicken Divan

Bake 3-4 chicken breasts, cool & cut-up into pieces
Grate almost 8 oz. of Cracker Barrel Cheddar cheese
1 can of Cream of Chicken soup (regular or low-fat)
1 cup Mayo (Hellmann's)
Broccoli (fresh steamed about a bunch of it or frozen
broccoli (use fresh it is much better)

Layer the bottom of a 9x13 casserole dish with
the broccoli, than layer the cut-up chicken breasts.
Mix together soup and mayo and spread on top of
the chicken. Layer the grated Cracker Barrel cheddar
cheese.
Bake uncovered for 1/2 hr. at 350 degrees
serve with baguette bread put through the slicer put
butter on the bread slices and garlic powder (bake
about 7 minutes - I put it under the casserole the last
7 or so minutes)
Serve with a side salad, use Paul Newsman's Balsamic
Vinaigrette dressing.

Pizza Casserole:

2 pounds hamburger
2 jars spaghetti sauce
2 handfuls spaghetti noodles, cooked and drained
1 ring Bologna, diced
shredded cheese
pepperoni

Mix the first 4 ingredients together. Fill a 9x13 half way, top with cheese and pepperoni. Add another layer of mixture and top again with cheese and pepperoni. There should be enough for another 8x8 pan, at least enough to do one layer. Bake at 350 degrees for 30 minutes.

Sweet Potato Casserole

3 cups cooked, mashed sweet potatoes
1 cup sugar
1/2 cup butter
2 eggs
1 Tablespoon vanilla
1 cup raisins

Topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup butter
Mix first six ingredients and spread into baking dish. Cover with topping.

Bake at 350° for 20 minutes.

brown some hamburger while that's going on cook some rice add those two together then add some canned tomatoes or spaghetti sauce top with cheese I made it tonight and hubby loved it. You can add garlic, onions what ever u like.
spaghetti always works and if there r left overs spread it on french bread and add shredded cheese to it and brown at 350 until bread is done.

Swiss Chicken Casserole:
INGREDIENTS:
8 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
1/3 cup water
8 slices Swiss cheese
2 cups Italian seasoned bread crumbs
1/2 cup butter

DIRECTIONS:
Preheat oven to 350 degrees F(175 degrees C).
In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.
Bake in the preheated oven for 45 minutes. Let cool and serve.

Moussaka: Greek Casserole
INGREDIENTS:
3 eggplants, peeled and cut lengthwise into 1/2 inch thick slices
salt
1 tablespoon butter
1 pound lean ground beef
salt to taste
ground black pepper to taste
2 onions, chopped
1 clove garlic, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon fines herbs
2 tablespoons dried parsley
1/2 cup butter
1 (8 ounce) can tomato sauce
1/2 cup red wine
1 egg, beaten
1/4 cup olive oil
1 1/2 cups freshly grated Parmesan cheese

1/2 cup butter
6 tablespoons all-purpose flour
4 cups hot milk
salt to taste
ground white pepper, to taste
1/4 teaspoon ground nutmeg

DIRECTIONS:
Lay the slices of eggplant on paper towels, sprinkle lightly with salt, and set aside for 30 minutes to draw out the moisture. Then in a skillet over high heat, heat the olive oil. Quickly fry the eggplant until browned. Set aside on paper towels to drain.
In a large skillet over medium heat, melt the butter and add the ground beef, salt and pepper to taste, onions, and garlic. After the beef is browned, sprinkle in the cinnamon, nutmeg, fines herbs and parsley. Pour in the tomato sauce and wine, and mix well. Simmer for 20 minutes. Allow to cool, and then stir in beaten egg.
To make the bechamel sauce, begin by scalding the milk in a saucepan. Melt the butter in a large skillet over medium heat. Whisk in flour until smooth. Lower heat; gradually pour in the hot milk, whisking constantly until it thickens. Season with salt, and white pepper.
Arrange a layer of eggplant in a greased 9x13 inch baking dish. Cover eggplant with all of the meat mixture, and then sprinkle 1/2 cup of Parmesan cheese over the meat. Cover with remaining eggplant, and sprinkle another 1/2 cup of cheese on top. Pour the bechamel sauce over the top, and sprinkle with the nutmeg. Sprinkle with the remaining cheese.
Bake for 1 hour at 350 degrees F (175 degrees C).
