How about hamburgers with ground turkey or ground chicken? Or using ground turkey and ground chicken in casseroles?
Also, looking up "Thanksgiving leftovers" gives lots of easy ideas for using turkey or chicken, any time of the year.

I am working with the same kind of crew. Meals that really seem to work are the create your own type such as tacos. You can even opt for chicken or turkey for tacos and if you put out enough choices everybody should be able to find something they like. Another one is grilled chicken salad. Some can eat the chicken with a side salad or mix it all together and use their fave veggies.

Chicken Ritz Recipe
I love this recipe because it's so easy to throw together and takes no time to serve. It's a half hour in the oven and it's ready. It can be prepared a day ahead of time for those busy people, just keep it refrigerated. It's served best with cranberry sauce to the side or just spread on top of it after its cooked..it's yummy!!
2 lbs boneless chicken breasts (as much as you'd like to prepare)
1/2 cup butter, melted (I use one stick for about 4 chicken breasts)
2 packages of ground-up Ritz crackers
4 servings
1. Cut off all unecessary fat from chicken breasts.
2. If breasts are thick, cut in half so you butterfly them.
3. Pound down with a mallet so they're not too thick, but not paper thin either.
4. Dip the breasts in your melted butter, both sides.
5. Dip the buttery breasts into the ritz cracker crumbs, on both sides and press firmly so the crumbs really stick to it.
6. Place on a cookie sheet in oven set at 350* for 15 minutes on both sides.

My family tried the same abusive crap with me. Yes, it is abuse. NO household cook should have to prepare special meals for every individual in the household. Nor should pre-teen children be allowed to pick and fix their own meals every mealtime - they need well-balanced, nutritious meals and are too likely to fix the same stuff every time - such as instant macaroni and cheese for a solid week, like one of our neighbor kids did!
Number one: you ain't their buddy, you're the Mom - and Mom sets the rules! Dad bloody well shuts up and goes along or Dad can make his own. If he pigs out on burgers every meal, goody for him - just let him know you've bought a nice fat insurance policy on him so when he dies of clogged arteries, you'll be able to bury him and then go dance with that handsome young gigolo down the street!
The family really needs to quit being so selfish. All wisecracks aside, they are indeed abusing you and it's not at all appropriate.
They can jolly well learn to eat what everyone else eats. You fix a decent, nutritious meal and serve it. Anyone whines, you say "That's what's for supper. If you don't eat it, I'll throw your plateful out and next meal for you is breakfast. NO snacks, NO substitutes; we're on a budget and can't afford 'em!"
But - to be fair, it won't hurt to fix what hubby likes on Monday, what Junior likes on Tuesday, what Little Sister likes on Wednesday, what Mom likes on Thursday, and so on - that way, at least periodically everyone's favorite gets featured and nobody's left out. BUT - if that's to continue, make 'em understand, EVERYONE eats what's NOT their absolute favorite when it's not their "favorite's night"!

what about wraps you can shove anything in them you can cook the chicken everybody likes and then put a pick and mix selection of sauces and veg/salads that most will like can do the same with pitta bread
