When someone's "going to town" on you, and you pass gas, is that rude? Should you say "excuse me" and expect the person to continue or is game over?

Let them decide, if they don't stop then it's not a big deal. Most likely they will giggle or quit or both. I wouldn't do or say anything unless they let you know they are bothered by it. Why ruin the experience if it's not really necessary?!

well.....if you can hold it and excuse yourself for a minute you should......but if it escapes without you being able to stop it apologize.... it is a normal thing, try to avoid it and otherwise apologize. (I wouldn't say game over)
