Homemade Tacos - HEALTHY AND GOOD! Under 30 minutes TOPS! I make this once a week as my "quick" meal and we call it Taco Tuesday.
You will need:
1 lb shredded turkey meat (Jenni-O is good brand)
Taco seasoning mix (can buy for under $1 at grocery store)
1 Tomato
Few lettuce leaves
Shredded cheddar cheese
Sour cream
Soft tacos (can heat in microwave) or hard tacos (takes 7 minutes in preheated oven at 325 degrees)
Preheat skillet. Throw in turkey meat. Brown (about 15 min.) While you are doing this, dice the tomatoes and shred the lettuce. Throw in seasoning mix (it will also ask for water) after turkey is browned.
You don't have to drain turkey meat because it is drier than beef (and smells much better and is better for you).
Allow meat mix to simmer for about 7 minutes. Start preparing what type of taco shell you'd like.
Then get your dish and load up your tacos the way you like it. I usually put meat first, then lettuce, then tomatoes, then sour cream, then cheese so the cheese sticks.

1 can of del-monte sliced potatoes (drain)
add 2 squares of kraft slices cheese
add 1 tablespoon parmesan cheese
add 1/4 cup milk
put in a small baking dish and sprinkle the top with melted butter and bread crumbs and shredded cheddar. bake at 350 for 20-30 minutes or until cheese is bubbly and starting to turn brown.

roll defrosted chicken breasts in the cheese-it's
bake in the oven for about 30 - 45 minutes at 350

CHICKEN QUICK STIR FRY
2 chicken breasts, boned (or buy the boneless or 8-10 oz. of chicken tenders)
1 sm. bell pepper, cut in slices
1 sm. onion, sliced
1 stalk broccoli, cut into bite sized pieces
1 carrot, cut into bite sized pieces
4-8 oz. snow peas
1 clove garlic, minced
1/2 tsp. fresh ginger, grated (opt.)
2 tbsp. cooking oil
1 tsp. sesame oil
Soy sauce or teriyaki sauce
Or Bird's Eye frozen vegetable mix to suit your taste (approximately 2 cups).
Prepare chicken and vegetables by cutting into bite sized pieces (except snow peas, leave whole). Heat skillet or wok until hot. Add oils. Brown chicken. When chicken is almost done, add onions, bell peppers, garlic, ginger and vegetables. Cook until fresh vegetables are to desired doneness or until frozen vegetables are hot through. Serve with rice and top with soy sauce or teriyaki sauce.
Serves 2-3.
NOTE: Vegetables listed are basics and others such as mushrooms, bean sprouts, Chinese cabbage and cauliflower can be added.

How about a nice chicken caesar salad? Good for you, and good in this hot weather. All's you need is the romaine, dressing, maybe croutons, a little grated parm, and the chicken which you can grill yourself or buy pre-packaged all ready to go.

Mushroom Stroganaff.
Make pasta
Cook about 1lb hamburger, drain, mix in one can of cream of mushroom soup (and extra mushrooms if you like them), and mix in about 8oz sour cream. If you use condensed soup, make sure to add water. Stroganaff should be thick, not soupy like sauce.
Pour stroganaff over pasta, maybe serve with garlic bread.
Should take about 15-20 minutes, feeds about four or five.

Throw a bag of cheese tortellini in a pot of water to boil. They cook very quickly. Drain them and add in some marinara sauce or some alfredo sauce.

It's not much trouble to cook up eggs or pancakes or waffles.
