You might want to get a book on animals/birds/reptiles/trees/flowers/ etc.. that are native to the area you are visiting and teach them about them. We used to see what we could find during our hiking/walks. It also helps to inform you of any dangerous animal, plants, things to avoid. Letting the children know not to go near these things is very important too.

sleepingbags for everyone, thermarests (if you have the money otherwise airbeds) and a large tent or two tents depending on whether you're children fight or are scared.... you want to take some food that is like well packaged energy bars (for both back-up and hiking) and some food (i.e. bread and cheese or corn) you can cook over a fire. firewood and the liquid is pretty much all you need to cook... you'll need sticks to cook with but generally, you can find those in a campsite!

Waterproof trousers/jacket, torch, tent, sleeping bag, lighter/matches and a saw/axe/sharp knife for firestarting. Take a disposable BBQ and some stuff to cook on it and some drinks.
Thats all you need! (oh and marshmallows for the fire!)

Antibacterial ointment, bandaids, bug spray, water bottle with sprayer, children's aspirin or tylenol, energy bars, all the first aid basics.
Teach them to stay with you and if they get lost, to stay in one spot.
