It's not a food, it's a type of food.
It has to be prepared a certain way.
Foods are kosher when they meet all criteria that Jewish law applies to food. Invalidating characteristics may range from the presence of a mixture of meat and milk, to the use of produce from Israel that has not been tithed properly, or even the use of cooking utensils which had previously been used for non-kosher food.

Kosher food is meat from an animal that has a cloven foot and chews cud. The slaughtering of the animal is also important if the meat is going to be kosher. It's the forefront of the animal. It can also have scales. Seafood (lobster, shrimp, crab, scallops) is not kosher. Chickens must also be slaughtered according to kashrut.
Kosher laws (kashrut) also include not mixing meat with dairy. You can't eat dairy food within (I believe) 3hrs. of meat; therefore a cheeseburger isn't kosher.

It is food made specifically for people of the Jewish faith. If I remember correctly, I believe it is Kosher because it has been blessed and prepared a specific way. (by a rabbi?)
