Chop 'em up, (add an onion if you have one) bung 'em in an ovenproof container with one or two tins of chopped tomatoes (depending on how much veg you have)add a little salt and lots of black pepper; put in medium oven for about an hour and you have a Ratatouille! Simple.

DEEP-FRIED BROCCOLI AND CARROTS IN SCALLION AND CAPER BEER BATTER
Beer makes for a particularly crisp batter here, and the capers add piquancy. The broccoli and carrots work well in this recipe, but cooks might use other favorite vegetables too, adjusting the deep-frying time as necessary.
1 1/2 cups all-purpose flour
a 12-ounce bottle of beer (not dark)
6 scallions, chopped fine
2 tablespoons drained bottled capers, chopped fine
1 1/2 teaspoons salt
vegetable oil for deep-frying
1 head of broccoli, cut into 1 1/2-inch flowerets
3 carrots, cut into 1/2-inch-thick sticks



Preheat the oven to 325°F. In a bowl whisk together the flour, the beer, the scallions, the capers, and the salt. In a heavy kettle heat 1 1/2 inches of the oil to 375°F. on a deep-fat thermometer, working in batches dip the broccoli in the batter, and fry it in the oil for 3 minutes, or until golden, transferring it as it is fried to paper towels to drain. Dip the carrots in the batter and fry them for 2 minutes in the same manner.

Serves 4 to 6.

well you might try this I would sizzle them in a little olive oil with some crushed garlic (part cook the carrots first if you have to have them) then add a good dollop of tomato paste stir in with salt pepper for a few seconds then whoosh in about a half glass of red wine (guzzle the other half for yourself to help you along the way) keep stirring and add a little oregano and or basil simmer for a few minutes until all is cooked and tasty looking then serve with pasta or crusty bread....its yum!

Easy. Slice and lightly cook the veg in salted water (or steaming is even better) so it's just tender. Drain. Place slices in ovenproof dish. Pour over simple white sauce, or flavour the sauce with whatever takes your fancy - bit of cheese, herbs, fried onions (but not all those together ofc!) - sprinkle with grated cheese or parmesan, generous helping of black pepper. Place in oven 15 mins med heat till top browns. Serve and enjoy. Goes well with nice white wine - Sauvignon or sthg light - and simple salad - rocket, cress, something with flavour to set off the light taste of your scrummy oven-baked veg :d

how about a stir fry which tastes good and is healthy
just get a wok throw in ur ingeridients which should be cut roughly the same size and then add oil before hand and then add in flavouring and make a sweet and sour sauce with sugar tomatoe puree and soy sauce and lemon and anyother chinese sauces.

ratattouille...mix the veg with tomatoes,tomato puree,garlic,thyme,peppers if you have em,and season..you'll know when it tastes right.serve with pasta or baked potato or rice.
