1 LB frozen spinach stuffed tortellini
1 cup frozen peas
4 Tbsp balsamic salad dressing, divided
2 large ripe tomatoes, cut into chunks
1 1/2 cup salad greens
1/2 cup diced sweet onion
DIRECTIONS: Cook tortellini according to package directions, adding peas during the last 30 seconds; drain & place in a large bowl. Add 2 Tbsp of salad dressing, toss gently & allow to cool. Add tomato, greens, onion & remaining salad dressing, toss gently & divide to salad plates.

Tortellini Salad
Ingredients
1 pound cheese tortellini, fresh or frozen
1 cup fresh broccoli florets
1 cup fresh parsley, finely chopped
2 Tbs pimiento, chopped
12 ounce jar marinated artichoke hearts, undrained
2 green onions, finely chopped
1 8 ounce jar marinated mushroom caps, drained
2 tsp fresh basil leaves, chopped
2 cloves garlic, finely chopped
1 can black olives, pitted, drained
1/2 pound grape tomatoes
1/2 cup extra-virgin olive oil
1/2 cup freshly grated parmesan cheese
Directions
Cook tortellini as directed on the package. Drain and rinse with cold water.
In a large bowl combine all ingredients, except cheese and tomatoes. Stir gently.
Cover and refrigerate 3-5 hours.
Just before serving add tomatoes and cheese and gently mix.
Note: You can make this salad the day before.

Broccoli and Tortellini Salad

"Crisp, fresh broccoli and cheese tortellini with a creamy dressing are the basis of this salad. Raisins, sunflower seeds and red onion dress it up. This recipe is most requested at potlucks."

INGREDIENTS:
6 slices bacon
20 ounces fresh cheese-filled tortellini
1/2 cup mayonnaise
1/2 cup white sugar
2 teaspoons cider vinegar
3 heads fresh broccoli, cut into florets
1 cup raisins
1 cup sunflower seeds
1 red onion, finely chopped

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8 to 10 minutes or until al dente. Drain, and rinse under cold water.
In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad, and toss.

Yummmm. Cook the tortelini acording to the package.
Combine 1/4 cup extra virgin olive oil
3 Tbsps balsamic vinegar
Salt and freshly ground black pepper
Minced basil and oregano
Assorted vegetables such as shredded carrot, julliened peppers etc.(Steam asparagus till crisp tender if using)
Combine first 4 ingredients. Prepare vegetables and add to cooked and drained pasta. Toss with vinagrette and sprinkle with cheese.

I mix tortellini with broccoli florets or chopped broccoli, pepperoni slices and good seasons package dressing. (Gourmet Caesar)
If I happen to have cheese in the refrigerator, I also add that too. Nothing else, and my husband LOVES iT!

www.allrecipes.com and there will be lots of recipes there. Easy recipes that people like us have come up with. Nothing like the Southern Living or Martha Stewart recipes. I have 4 kids and I love that site for things that they will like and that won't take me all day to fix.

I would just toss in all together in a light italian dressing or vinagrette. Sounds delicious!
