Because the first Christians were actually power-hungry old men. 'Hey, maybe if we make God an old, pale guy, we can have power over women and other races!'

Nobody really knows what God looks like. Artistists may try to depict him according to their own beliefs.

I think everybody ascribes parts of their own physical features to what they perceive as God's appearance. If you saw a painting of God as a pale-skinned man, it was probably painted by a pale-skinned man.

And as for the "old" part, people associate age with wisdom. Therefore, it becomes logical to see a wise god as being old.

Perhaps he's a fiery luminescent being with red skin and white hair. Actually, that's wha the bible says, minus the skin color part. Red is only my specutlation because Adam was supposably red and he was made in the image of God. Perhaps he is yellow like brass?

I never saw G-d depicted as anything. As far as I know he is not human, he is a spirit. So, he would not be depicted as anything.
In the Bible he is a fire, a cloud, a wind....

Because old pale-skinned men invented him, so he took on their appearances. He was created in their image! (Not the other way around)
