God only made the first person out of mud and dirt.

He made the second one by forming her from the rib of the first one.

Everyone else ever since has come into this world "the regular way."

As for why He chose Mary to conceive Jesus -- it's a long story, but it has to do with Mary being sinless and being the New Eve, and the New Ark who would bear the New Covenant Jesus.

Just as the old Ark, the Ark of the Covenant, bore the tablets of the Old Covenant.

When god use the dirt that was his first creation, to let you know what he did when he created the world. God using Mary is a promise that he sent his son into the world and he was conceive out of a virgin a woman that god found worthy to bring his son into the world he did not need mud again because families were already created.

It wasn't just about dirt... God for all intents and purposes made man out of nothing; or at least nothing special. When he breathed, man was a living creature.

Jesus is God (or a part of him... sort of), and God had to set Himself apart from his creation but still be a human being.

If Jesus had been made the same way, he would have been a creature separate from humans. God created Himself in a person to be a person but still breathing life into Himself.

First, God didn't have to use Mary but He did choose to. Using this method, He made Jesus both God and man.

(I'll get to your question, but I have to build up to it, so please be patient)
God made the earth and gave it to Adam and Eve. He gave them dominion over it and told them to be fruitful and mulitply. Like giving someone a present and telling them what to do with it.
By sinning, though, Adam and Eve gave their gift (Earth) to Satan (who was using a snake to trick Eve - who knew better anyways b/c God told them to leave the tree alone).
Since Satan had the Earth, he also had Adam and Eve. Now, God was on a mission to get back His children who had foolishly given themselves away. God needed an entrance into the planet He created, but He couldn't just storm down, because the property wasn't His anymore (He gave it away and Satan, unlike Adam and Eve, wouldn't like Him walk around on his ground). See, God won't break His word or go opposite of what He says because that would make Him a liar and not God. So generations later, God found a man that he could make a covenant with (Abram soon to be Abraham). So started the Jews, God's chosen people. It took lots more time, but the coming of the Savior eventually came. God needed to have Jesus be born because the earth still wasn't His so He took a willing woman and sent His Spirit to conceive a Child in her. That Child would grow up and bring back to God His lost children. Pretty cool that He had His eye on redeeming us since the beginning, eh?

He came through this life, the same way you and I do, to show us the way. Although we cannot live a sinless life as He did, it gives us something to strive for.
