Maybe you should just get up the courage to talk to her. I'm a shy person too, but the best way to get me to talk is to be interested in getting to know me. It's definitely more comforting and may help your shy girl get out of her shell.
You could ask her when her break is and take her out to lunch or something. Make sure she knows that you're not some horny jerk, because if she's conservative, she's going to want a good guy. And you seem like good guy.
Good luck!

This shy girl just doesn't know you, and that is why she doesn't want to talk in long conversations. Shes afraid that she might say something wrong especially since you are a new person in her life and doesn't know your interests, etc. If you can possibly open up more to her she might open up more to you. Because she is at work, you might want to wait until her shift is over and you might find conversations will come easier. If you really like this girl your probably going to have to take it slow. Good Luck, I'm pulling for ya.

Hey, ur prob sounds a wee bit complicated. If u try 2 catch her attention, she may think u have other intentions. For heavens sake, dont gift her anything. What are her work hours? i think the only way would be to wait up till she finishes her work and then try talking to her. Since u have been seeing her for a long time, she may not think ur a complete stranger. so the best thing to do would be to wait up and talk to her after her work hours and find out if she is interested and whether she likes u or not.. All the best.

just try to ask her out when you have to chance. you should ask her before she slips away. she probably likes you too, you can't keep her waiting for ever. never expect a shy girl to make the first move. but if you just want her to talk then try to make her laugh and warm up to you. since she is shy, she is not just going to talk to you out of the blue. to her you might be just another customer, so you have to make her think otherwise. do something like the other girls said, slip her a note. you want her to think of you after her shift is done, so write her something nice and sweet.

Ask her, when you order a coffee next time, if she would like to have dinner/lunch with her after work is over. I doubt she'd say "no."

Go right ahead and talk to her maybe she likes you too. Just don't come on too strong for her or she'll run like a gazelle away from you. Take things slowly.

when she's done after work, ask to walk alone and have a talk together. also there's nothing wrong with being shy.
