Need some new ideas. If possible low fat.

Mexican Rice and Chicken Bake
1 pack taco seasoning
1 can/jar stewed tomatoes
1 bag Mexican rice mix
2 lbs chicken (even easier if they are leftover)
1 1/2 c shredded cheddar cheese
1 onion, diced
Jalapenos *optional
sour cream
2TB butter


Cook rice according to directions.

( If using fresh chicken, cook however you like it. Boiling, baking or grilling are great lowfat options. )

Remove chicken and skin from bones. Add meat to a pan with tomatoes, 2tb butter, onions, and taco seasoning. Cook until heated thoroughly.

Preheat oven to 400F. Combine chicken mixture and rice mixture in pan. Sprinkly with jalapenos, if used. Cover the entire mixture with shredded cheese.

Bake in oven for 20 minutes or until dish is bubbly and cheese is golden.

Serve with sour cream.

Side dishes: cornbread, whole cooked pintos, tortillas.
